Apple Sage & Sausage Stuffing

In a large sauté pan melt butter, add in onions, celery, apples, sage & salt and pepper. Sauté until the veggies are tender. Pour into a disposable aluminum half pan or 2/3 quart grill proof casserole dish. (You may want to spray with non stick spray first) Pour bread crumbs into pan and mix. Pour over chicken stock and set aside. In the same sauté pan brown the sausage until no longer pink and almost cooked through breaking up any large pieces. Add sausage to the stuffing. Mix to combine. Preheat grill to 225° using super smoke if possible smoke the stuffing for 20 to 30 minutes then increase the temperature to 350°F for an additional 20 to 30 minutes until crispy on top. Remove from grill and serve warm Topped with chopped scallions.
