Enjoy juicy, delicious, wood-fired turkey year-round, not just for the holidays! This simple recipe prepares a bone-in turkey breast on a Traeger grill with beautiful seasoned skin and tender meat, perfect for dinner, sandwiches, or meal prep.
STEP 1: PREP
Remove the turkey from the package and pat dry.
Using kitchen scissors, cut along both sides of the ribcage. Pull it back to expose the joints and cut between them to remove the ribcage.
Make a cut along the back between the breastbones so you can gently press and flatten the turkey slightly.
STEP 2: FIX THAT SKIN!
Gently run your fingers underneath the skin to loosen it and spread it evenly over the breasts. No bunching! Want to add butter or extra seasoning underneath? Go for it!
STEP 3: SEASON EVERYTHING!
For this cook, I used Traeger Whiskey Dust Rub. My trick? TWO coats of seasoning! Start bone-side up because you eat ALL sides, so season ALL sides! Flip to the skin side, apply a lighter first coat, then a second heavier coat. Get into every nook and cranny!
STEP 4: WOOD-FIRED GOODNESS!
Set your Traeger to 275°F. Place the turkey directly on the grill and cook until the thickest part reaches 165°F. I like to pull mine at 163–164°F and verify it reaches 165°F as it rests.
STEP 5: SLICE & SERVE!
Rest the turkey, then cut along the breastbone to remove each breast. Slice into beautiful portions with that delicious seasoned skin on every piece!
