Asian Inspired Pork Marinade for Collars

1. Slice a couple of regular pork collars into 1/2-inch thickness. 
2. In a bowl, combine 1 cup soy sauce, 1/2 cup hoisin sauce, 1/2 cup sriracha, 3 to 4 tablespoons each of minced garlic, minced ginger, and honey, 2 tablespoons each of sesame oil, umami paste, annatto powder, and chili oil, and 1 tablespoon five spice powder to create the marinade.
3. Place the sliced pork into the Asian inspired marinade, ensuring it's fully coated.
4. Allow the pork to marinate for a minimum of 24 hours in the refrigerator.
