Awesome Sausage Rolls

1. Preheat your grill to 375°F.
2. Divide the sausage meat into three equal log-shaped portions (remove from casings if needed).
3. Divide the puff pastry sheet into 3 portions using a pizza cutter.
4. Spread spicy mustard down each pastry portion.
5. Top each with a portion of sausage and shredded cheddar.
6. Sprinkle on chipotle powder or BBQ rub. You can also add finely minced jalapeño or poblano for extra heat.
7. Fold over the pastry and press down with a fork to secure the edges.
8. Whisk the egg and brush the top of each roll with the egg wash.
9. Make a few slits on the top of each roll.
10. Place the sausage rolls on a silicone or parchment paper-lined baking sheet.
11. Bake on the grill at 375°F until golden brown and the internal temperature of the sausage reaches a minimum of 165°F. This typically took between 30 to 35 minutes.
12. Remove from the baking sheet to a mesh baking rack.
13. Serve warm.
