Bacon Weave Meatcake

1. Build the bacon weave on a sheet of plastic wrap.
2. In a large bowl, mix together the ground wagyu brisket, ground pork, lean ground beef, puréed onion & jalapeño, minced garlic, dried chives, and Traeger Grills chicken rub.
3. Place the meat mixture on top of the bacon weave.
4. Bring the sides of the plastic wrap up to form the meatcake and place it into a small springform pan.
5. Set the meatcake in the fridge for 4 hours or overnight prior to grilling.
6. When ready to grill, carefully remove the plastic wrap and the springform pan.
7. Grill the meatcake low and slow at 250F until its internal temperature reaches 150F.
8. Glaze the meatcake with your own homemade BBQ sauce before serving.
