Bacon Weave Meatloaf

First, cut the 1.5 lbs of thin bacon slices lengthwise in half. Then, weave the bacon over a plastic wrap base to create a tight weave. In a separate bowl, combine 2 lbs of 80/20 ground beef, 1 lb of chorizo, 1 lb of ground sausage, finely chopped onions, and spices to form the meatloaf mixture. Carefully place the meatloaf mixture onto the bacon weave and wrap it up tightly. Refrigerate the bacon-wrapped meatloaf for 2 hours before transferring it to the grill to cook until done.
