Bacon Wrapped 3 Cheese Meatloaf

In a food processor, add onion, garlic and two tablespoons of garlic pepper. Pulse until a paste is made. In a large bowl, mix ground beef, onion, garlic paste, eggs, breadcrumbs and chives. Divide meat mixture into four equal portions. Place one of the portions in the bottom of a large loaf pan and layer on the first slab of the three cheeses. Repeat the process, finishing with the ground beef mixture. Cover with plastic wrap and refrigerate for a minimum of four hours or overnight. Tap out the loaf of meat and season with garlic pepper. Wrap with bacon starting at the ends & slightly overlap the slices. Place onto a mesh baking rack. Preheat Traeger Woodridge grill to 225°F. Smoke for one hour then increase the temperature to 350°F. When the meatloaf reaches 150°F glaze with your favorite bbq Sauce. Continue to grill & finish at 160°F. Remove from grill & let this rest for at least 15 to 20 minutes prior to slicing.
