Bacon Wrapped Meatloaf

In a large bowl, mix ground beef, eggs, onions, breadcrumbs, minced garlic, Italian seasoning, onion powder, kosher salt, and black pepper. Form the mixture into a large loaf. Chill for 1 hour. Preheat your grill (e.g., Traeger Grills) to 250F. On a large piece of parchment paper, lay down 9-10 slices of bacon slightly overlapping. Then, take three additional slices and place at each end, also slightly overlapping. Place the formed meatloaf down the center of the bacon slices and wrap the bacon around, pressing in slightly (the bottom of the meatloaf will not have any bacon). Place the meatloaf onto a mesh bakers rack over a lined pan. Season with Redmond Garlic pepper or a favorite BBQ rub. Place the meatloaf on the grill. Smoke for 1 hour, then increase the grill temp to 375F and continue to grill until the internal temperature reaches 150F. Brush BBQ sauce over the meatloaf and continue to grill until it reaches an internal temperature of 160F. Remove from the grill, rest for 5-10 minutes, then slice and serve.
