This beautiful stuffed turkey breast wrapped in bacon can be made the day ahead! Use your favorite premade stuffing & sausage and customize it to your taste buds. Easy to make & deliciously good, just a couple of steps to woodfired goodness.
1. Cover an 18 x 26” standard baking sheet with plastic wrap. Butterfly the turkey breasts and place them on the covered baking sheet. Cover with another layer of plastic wrap.
2. Use a meat mallet or rolling pin to flatten the turkey breasts to a consistent thickness to cover the baking sheet. Remove the top layer of plastic wrap and season the turkey with Traeger Fin & Feather.
3. Cover the seasoned turkey breast with overlapping slices of thin bacon. Cover the bacon with plastic wrap and flip over onto the counter or another baking sheet. Remove the plastic wrap and spread the sausage mixture and the stuffing to cover the turkey.
4. Roll the turkey breast into a log using the plastic wrap from the bottom to lift. Cover and refrigerate overnight.
5. Preheat your Traeger grill to 275F. Remove the wrap and place the turkey roll on the grill. Grill until the internal temperature reaches 150F.
6. Pour the BBQ sauce (mixed with apple juice) over the bacon wrapped turkey. Increase the grill temperature to 350F. Continue to grill the turkey until the internal temperature reaches 165F.
7. Remove from the grill and rest for 10 minutes prior to slicing.
