This recipe offers an over-the-top delicious, melty, smoky take on Cordon Bleu with a BBQ twist, all wrapped in bacon. It's described as 100% worth the effort for a drool-worthy BBQ and grilling experience.
1. Lay a sheet of plastic wrap and shingle your bacon slices slightly overlapping.
2. Pound out chicken breasts evenly to ¼-inch thickness.
3. Place chicken on top of bacon and season generously with Traeger Tex Mex Rub.
4. Layer on the deli ham, then the cheddar — leaving about a 1-inch border.
5. Using the plastic wrap, roll tightly into a cylinder and tie off both ends. Chill completely.
6. Preheat your Traeger grill to 275°F.
7. Remove the plastic wrap and insert a Meatermade probe set to 155°F internal temp.
8. Once the chicken hits 155°F, increase grill temperature to 350°F. Slather with a thin coating of your favorite BBQ sauce.
9. Continue grilling until the internal temp reaches 165°F.
10. Rest 5–10 minutes, then slice and serve that gorgeous, cheesy, smoky perfection.
