BBQ Chicken Lollipops

1. Season trimmed chicken legs generously with sweet & heat BBQ rub.
2. Place the seasoned legs standing up in a disposable aluminum half pan with 6 tablespoons of unsalted butter.
3. Place the pan on your Traeger Grills (e.g., Pro 780) set to 275F for 45 minutes.
4. At the 45-minute mark, add 1 cup of low sodium chicken stock to the pan. Lay the chicken legs down into the liquid and cover the pan with a layer of foil.
5. Grill for an additional 45 minutes. After a total of 1.5 hours, the internal temperature of the legs should be between 170-180F.
6. While the legs are finishing, prepare for the next step: Place a mesh bakers rack onto a baking sheet and spray it with non-stick spray.
7. Remove the legs from the grill. Dip each leg into BBQ sauce and then sprinkle with additional BBQ rub. Place each sauced leg on the prepared mesh baking rack.
8. Increase the grill temperature to 350F.
9. Place the tray of legs back on the grill to set the sauce for an additional 10-15 minutes.
10. Remove from the grill, rest for 10 minutes, and enjoy!
