Beautiful Smoked Garlic from the Grill

1. Cut the tops off of whole bulbs of garlic.
2. Sprinkle the cut side with some olive oil, salt, and pepper (or your favorite BBQ rub).
3. Set your Traeger Grill to 275F.
4. Place the garlic bulbs on the grill and smoke until just golden in color, about an hour.
5. If the garlic appears dry, add a cup of water to the bottom of the tray to create steam.
6. Cover the garlic with foil and continue to smoke until the cloves are softened and creamy. The total smoking time will be about 2 1/2 hours.
7. Once cooked, let cool. To store, wrap the whole bulbs in plastic wrap and then place them into a freezer Ziploc bag.
8. To use, thaw a frozen bulb in the microwave for about 45 seconds.
