Best ever dirty roasty potatoes

In a 6qt pot boil potatoes in generously salted water until just starting to be fork tender. Remove from heat and drain. Leave the potatoes in the pot and shake them up a bit to add some texture to the outside - set them aside in the warm pan for 10 minutes to evaporate any remaining liquid.

While the potatoes are cooking- fry the bacon on medium low heat till crispy. Remove bacon pieces and set aside.

Preheat your grill to 225F. Line a grill safe pan with foil. Place potatoes on the pan. Drizzle the potatoes with the remaining bacon fat and any of the remaining crispy bits of bacon. Take a few pieces of the cooked bacon and chop them very finely - add those to the pan as well. Season with salt and pepper. Smoke potatoes for 1/2 hour. Increase grill temp to 400F. Grill for 1 hour then turn all of the potatoes over. Continue to grill for 30-45 minutes more or until golden brown. Depending on your potatoes and their moisture content, this may take an additional hour. Serve warm with a garlic aioli, topped with cooked bacon (optional) or your favorite potato condiment.
