Blue Cheese Stuffed Hanger Steak

Slice the hanger steak open like a book, ensuring each side of the steak has an equal thickness. In a small bowl, mix 2-3 tablespoons of blue cheese with an equal amount of garlic cream cheese. Spread this mixture down the middle of the seam inside the opened steak. Tie the stuffed steak every inch with butchers twine to secure the filling. Season the steak liberally with Fiesta Spices Uncle Chris seasoning. Smoke the steak at 180°F until its internal temperature reaches 100°F. Then, sear the steak at 500°F until its internal temperature reaches 120°F. Rest the steak for 15 minutes prior to slicing and serving.
