Buffalo Glazed and Injected Smoked Chicken
30 mins prepServes 4
A Buffalo wing inspired whole chicken recipe that uses both injection and glazing with a homemade Buffalo sauce to seriously amp up the flavor and provide crazy levels of moisture, resulting in a knock-out BBQ hit.
1. Preheat grill to 250F.
2. In a small pot, mix clarified butter, spicy brown mustard, and chili garlic hot sauce together on medium heat. Whisk until the butter has melted and the ingredients are emulsified. Set aside to cool.
3. Divide the sauce in half; use one half for glazing and the other for injecting.
4. Place the spatchcocked chicken on a cutting board breast side down. Tuck the wings behind the breasts. Season generously with salt and pepper.
5. Flip the chicken over to be breast side up. Inject the chicken every 1/2 square inch with small (1ml) injections, ensuring the chicken is completely saturated all over.
6. Season generously with salt and pepper again. Place the chicken on the grill bone side down.
7. Grill until the internal temperature in the thickest part of the breast reaches 140F (approximately 1 1/2 hours).
8. Increase the grill temperature to 350F. Glaze the chicken with the remaining sauce. Continue to grill, glazing again, until the internal temperature of the thickest part of the breast reaches 165F and the thigh meat reaches 180F.
9. Remove the chicken from the grill and rest for 10-15 minutes prior to slicing.
10. Season with additional kosher salt and pepper to taste before serving.
