Butter & garlic herb basted spatchcock chicken

1. Preheat your grill to 275F. (The author used hickory wood pellets).
2. Spatchcock your chicken. (Refer to an IGTV video for instructions if needed).
3. Season both sides of the chicken generously with salt & pepper.
4. Place the chicken on the grill bone side down, breast side up.
5. In a small bowl, whisk together the melted butter, garlic paste, fresh thyme, fresh oregano, fresh flat leaf parsley, and dried chives.
6. Slather a layer of the herbed butter onto the chicken.
7. Close the grill lid and repeat the basting process every 15 minutes.
8. Grill until the internal temperature of the chicken breast reaches 163F. Recommend checking the temperature after 45 minutes.
9. Remove the whole chicken from the grill and tent lightly with foil.
10. Rest for 10-15 minutes. The internal temperature will rise to 165F.
11. Serve with wedges of grilled lemon for an added finishing touch.
