Sweet, spicy, smoky, and buttery, these wings are dripping with flavor. They are kissed by smoke and glazed with a sticky sweet heat, featuring a homemade Cajun honey butter rub enhanced with honey and butter powders.
1. **Prepare Cajun Honey Butter Rub:** In a small bowl, combine 2 tablespoons Cajun Seasoning, 2 tablespoons honey powder, 1 tablespoon butter powder, 1 teaspoon garlic powder, 1 teaspoon onion powder, and 1/2 teaspoon black pepper.
2. **Season Wings:** Place 2 pounds of chicken wings in a gallon zip-top or reusable bag. Add the prepared rub, seal the bag, and shake to thoroughly coat the wings.
3. **Marinate:** Refrigerate the seasoned wings overnight for maximum flavor.
4. **Initial Grill:** Preheat your grill (e.g., Traeger grills) to 275°F. Place the wings directly on the grill grates. Grill for 30 minutes, then flip the wings and grill for another 30 minutes.
5. **Prepare Wing Glaze:** While wings are grilling, combine 3/4 cup honey, 3 tablespoons Traeger Hot Sauce (or your favorite hot sauce), 2 tablespoons clarified butter, and 1 teaspoon salt in a small pot. Whisk the ingredients together and bring to a simmer over medium heat.
6. **Finish Grilling:** Remove the wings from the grill and toss them in half of the prepared glaze. Increase the grill temperature to 375°F. Return the glazed wings to the grill for another 30 minutes, or until the internal temperature reaches 175–180°F and they are nicely crispy.
7. **Serve:** Drizzle with more glaze if you like extra saucy wings, and serve immediately.
