Carne Asada Done Right

Add all marinade ingredients to a small food processor and blend until combined. Pour the marinade over your steak (hanger, skirt, flank, flat iron all work beautifully). Marinate the steak in the fridge for 2–4 hours only. Do NOT marinate overnight as the acids will start breaking down the meat, causing loss of texture. Remove the steak from the marinade and shake off excess. Griddle the steak on medium/high heat until nicely charred with crispy edges, flipping a few times. Cook to 125–130°F internal temperature for medium rare. Rest the steak for just a couple of minutes before slicing.
