Delicious Chinese BBQ pork grilled on a Traeger. This versatile pork, flavored with ginger, fire honey, garlic, soy, and sriracha, can be used in ramen, topped on noodles or rice, or enjoyed cold the next day.
Whisk all the marinade ingredients together. Reserve 1 cup for glazing. Place pork slices (up to 8lbs max, ensure consistent thickness) into a resealable ziploc or non-reactive container. Pour over marinade, tossing to coat. Marinate overnight in the fridge for best results, turning over pork every few hours.
For fall-apart pork, grill until it reaches an internal temperature of 203-205°F. For sliced pork, grill to 155°F. Glaze the pork throughout the cooking process with the reserved marinade. Grill at 275°F. For crispier pork, grill hot and fast at 400°F+.
