Chinese Takeaway Party Ribs

Remove the membrane from the back of the ribs. Slice into individual bones and season lightly with salt and pepper.

Place on a sprayed rack over a foil-lined tray. Smoke at 225°F. Lightly spritz with water — moisture helps smoke cling for better flavor.

Smoke until ribs hit ~180°F internal.

Sauce:

Simmer sesame oil, garlic, and ginger until fragrant.

Whisk in remaining sauce ingredients.

Simmer 10–15 minutes, stirring occasionally, until thick and glossy.

Glaze ribs generously at 180°F.

Continue cooking to 200°F+, glazing 3-4 more times until sticky and caramelized.

Finish with sesame seeds. Serve hot.
