Chocolate Bacon Pig Candy Whisky Truffles

1. Place the semisweet chocolate in a large heatproof glass bowl.
2. Bring the heavy cream to a simmer and pour over the semisweet chocolate, adding in the vanilla and the whisky.
3. Pro tip: you can always add in another layer of woodfired goodness by smoking the heavy cream first at 180°F for 20 minutes then chilling it before use.
4. Let sit for 2 minutes then with a rubber spatula mix until smooth.
5. Refrigerate for a couple of hours till firm.
6. Portion out balls of truffles and refrigerate for an additional hour.
7. Melt dark chocolate and dip truffles.
8. Add pig candy to the tops of the truffles as soon as they are dipped.
9. Refrigerate till firm. Serve to only the people you truly adore at Christmas.
