1. Prepare the potato wedges: Cut russet potatoes into equal-sized wedges.
2. Season the potatoes: Toss the potato wedges with a little bit of oil and either your favorite barbecue rub or the homemade herb & butter rub.
3. Prepare the Herb & Butter Rub (if using): In a small bowl, combine 2 tablespoons butter powder, 1 tablespoon garlic powder, 2 teaspoons dried parsley, 2 teaspoons dried thyme, 2 teaspoons dried oregano, 2 teaspoons dried dill, 2 teaspoons salt, and 1 teaspoon fine grind fresh pepper. Sprinkle this generously on the potato wedges.
4. Preheat grill: Preheat your Traeger grill to 450°F.
5. Arrange wedges: Line a baking sheet with a silicone mat or cover with foil and nonstick spray. Layer the seasoned potato wedges out evenly on the baking sheet.
6. Grill the wedges: Place the baking sheet with wedges on the preheated grill. Grill for 20 to 25 minutes first until you get some color and crispiness on one side.
7. Flip and continue grilling: Flip the wedges over and continue to grill until they are crispy and fork tender.
8. Prepare the Smoked Garlic Aïoli: While the potatoes are grilling, in a bowl, combine 1 cup mayonnaise, 2 tablespoons lemon juice, 1 tablespoon dried chives, 1 teaspoon salt, 1 teaspoon black pepper, and the contents of 2 smoked garlic bulbs (smashed).
9. Mix the aïoli: Smash the smoked garlic and stir all aïoli ingredients together until well combined.
10. Serve: Serve the hot grilled potato wedges immediately with the easy smoked garlic aïoli.
