Diva Q Cherry Chipotle BBQ Ribs

Preheat Traeger Grills to 225F using hickory and cherry wood. Pour 1 ½ cups apple juice into a spritz bottle and set aside. Remove the membrane from the backs of the ribs. Spritz racks with apple juice on both sides and place bone side up on a baking tray. Sprinkle rib rub on the bone side, then flip ribs over and sprinkle a generous amount of rub on the meat side. Place ribs on the grill bone side down and spritz with apple juice every 45 minutes. When ribs reach an internal temperature of 170F (measure with a Thermapen between bone 4/5), remove from the grill. Cut pieces of heavy-duty foil 3-4 inches longer than each end of the ribs. Place each rack on the foil meat side down. Sprinkle each rack on the bone side with ¼ cup brown sugar, 2 tbsp unsalted butter, and 2 tbsp honey. Close the sides and one end of the foil, and fold over, leaving one end open. Create a funnel at each of the open ends and pour in ½ cup of apple juice in each. Fold and close the end to cover. Increase grill temperature to 275F and return the ribs to the grill. Continue to grill until the internal temperature reaches 194-196F. Create a BBQ Foil boat by opening up the package and folding down the sides. Carefully flip over ribs in the BBQ Boat, placing them meat side up. Glaze with Cherry Chipotle BBQ Sauce and return to the grill. Continue to grill until the internal temperature reaches 204-206F. Remove from grill, rest for 10 minutes, slice, and serve.
