Diva Q Corned Beef Hash

In a large sauté pan, melt bacon fat on medium heat. Add in onions and sauté until they are softened. Add in potatoes and stir to coat them. Stir the potatoes often until all of the edges are crispy and brown (this can take up to 30 minutes). Sprinkle on pepper and fold in corned beef cubes. Sauté until warmed through and place in a cast iron pan. Keep warm in the oven on low heat but do not cover. Taste test & adjust for salt if needed.

For the eggs: Whisk eggs. In a small non-stick pot on low heat, melt butter then add in eggs. Stir often for 15 minutes or until the eggs are just starting to congeal. Add in cream. Continue to stir until the eggs are glossy and just beginning to set. Remove from heat. Scoop eggs out into the middle of the cast iron pan with the hash and top with chilies, a sprinkle of salt, and spring onions. Serve immediately.
