In a large bowl, whisk sugar, yeast, and warm water together. Stir in flour and salt until well incorporated. Cover bowl with plastic wrap and leave at room temperature for 12 hours. Generously dust your countertop with flour and turn the dough out. Mix in the Italian seasoning and 1 cup cheese. Place the dough inside a large bowl brushed with the olive oil to rise again for 1 - 2 hours, covered with a clean kitchen towel. Preheat your grill to 450F. Place an 6-8Qt Dutch Oven with lid onto the grill to preheat for a minimum of 1/2 hour. Sprinkle dough with remaining 1/4 cup shredded cheese. When the Dutch oven is preheated, transfer the dough onto a piece of parchment paper sprayed with non-stick spray and into the heated pan. Cover with lid. Bake for 35 minutes until just turning golden. Remove the lid and continue to bake for 10-20 minutes or until the temperature of the bread is 195-205F.
