Who doesn’t love Mexican street corn? Such a simple side dish perfect to go with tacos, cold beer or because it’s Tuesday and just because you feel like it. My Mexican street corn starts with something very different and that is wet paper towels and a microwave that’s right I actually start out by wrapping six ears of cleaned corn with wet paper towels and putting it in the microwave for between 10 and 15 minutes or until the internal temperature measures 170°F. It’s super easy & you get the plumpest corn! After the corn comes out of the microwave it’s pretty simple - get your grill going between 400 to 450°F today I used the Ranger with the grill insert. I like using wood sticks inserted in the end of the corn. Makes it so easy to turn the corn over every couple of minutes. Grill all the corn until lightly charred this only takes 10-15 minutes. in a small bowl mix 1/4 cup sour cream with 1/4 cup @dukes_mayonnaise and add in 1/2 tsp poblano powder. Dredge your coated corn in cotija or finely crumbled queso blanco. Top with finely chopped cilantro a squeeze of lime, some dark chili powder plus salt and pepper. So fast so easy and so delicious Happy Cinco de Mayo !
