Fix It Yourself Sunday Taco Board

Slice the raw chicken breasts and season them with your homemade savory sugar free rub and a few splashes of Cholula Hot Sauce. Layer the seasoned chicken in the bottom of a loaf pan. Top the chicken with the leftover roasted peppers & veggies. Place the loaf pan on the grill at 350F for about 45 minutes, or until the chicken reaches an internal temperature of 160F. Once cooked, top the chicken and veggies with some mozzarella and sliced jalapeño. Pop the loaf pan under the broiler at 500F until the cheese is bubbling and golden. While the chicken finishes, slice an avocado, chop some cilantro and onions, and scoop out some sour cream and pico de gallo. Serve the loaf pan taco chicken with low carb tortillas and all the prepared toppings on a taco board.
