Greekish Pork Souvlaki (Extra Garlicky Edition!)

1. In a large bowl, whisk all marinade ingredients together until combined.
2. Remove pork tenderloin from packaging and trim off any residual silver skin.
3. Cut pork into 1-inch medallions, then cut each medallion into 4 bite-sized pieces.
4. Add pork pieces to marinade, toss well to coat, and refrigerate for a minimum of 1 hour (overnight for best flavor).
5. Skewer pork onto bamboo or metal skewers.
6. Preheat your Traeger grill to 400°F.
7. Grill pork skewers until internal temperature reaches between 150–155°F (about 10–12 mins), turning occasionally.
8. If desired, grill lemon halves alongside pork for that smoky citrus squeeze!

Serve hot with rice, salad, and grilled lemons!
