Grill-Baked Sausage, Tomato & Cheese Focaccia

1. Mix & Bloom – Whisk warm water, salt, sugar, and yeast. Rest 5 min until bubbly.
2. Make Dough – Stir in flour until wet & shaggy. Cover and rise 2–3 hrs until doubled.
3. Prep Pan – Add 2 tbsp olive oil to a 10x14x2.5” metal pan.
4. Second Rise – Transfer dough to pan, stretch to corners, cover, and rise again until nearly to the top.
5. Preheat – Grill or oven to 425°F.
6. Top & Dimple – Press fingertips into dough, drizzle oil, top with sausage, cheese, tomatoes, basil, and flaky salt.
7. Bake – 30–35 min until golden, 200°F internal temp. Cool slightly before slicing.
