Grilled Flank Steak Fajita Salad with Smoked Garlic Chipotle Sauce

Preheat your grill (e.g., Traeger Ranger with cast iron insert) to 425F. Grill marinated flank steak slices, peppers, and onions until cooked to your desired doneness. While grilling, prepare the smoked garlic chipotle sauce: Squeeze the smoked garlic out of its husks into a food processor. Add Greek yogurt, chipotles in adobo sauce, lime juice, and season with salt and pepper. Pulse until you have a smooth, creamy sauce. Assemble the salad by layering salad greens, grilled steak, peppers, onions, tomatoes, fresh lime, and cilantro. Drizzle generously with the smoked garlic chipotle sauce before serving.
