A method for grilling trimmed chicken thighs, first cooking skin-side up with clarified butter, then covered until tender, glazed, and finally returned to the grill to set the sauce for a moist and succulent finish.
Trim chicken thighs and season generously with pork & poultry seasoning. Place the seasoned chicken thighs skin side up in a pan with clarified butter. Cook on the grill at 275F for 45 minutes. Then, flip the chicken over so it's skin side down and cover the pan with foil. Continue cooking for another 30-45 minutes until the internal temperature reaches 180F. Remove the chicken from the pan and glaze with your desired sauce. Return the glazed chicken to the grill for 15-20 minutes to set the sauce.
