Grilled Hot Brown with Cheese Sauce

1. Preheat your Traeger grill to 350°F.
2. Grill thick turkey slices for 4-5 minutes, adding a sprinkle of Traeger whiskey dust rub for flavor. Set the grilled turkey aside.
3. Find some lovely ripe tomatoes, slice them, and season with salt and pepper.
4. Make a simple cheese sauce: Melt 2 tablespoons of unsalted butter in a pan. Whisk in 2 tablespoons of all-purpose flour until there are no clumps. Whisk in 1 cup of whole milk and bring to a simmer. Add 1/4 teaspoon white pepper and 1/2 teaspoon salt. Slowly add in up to 2 cups of your favorite shredded cheese (such as Gouda, sharp cheddar, or Monterey Jack) a small handful at a time. Whisk until melted and smooth. Set aside.
5. Assemble the Hot Brown: Place toasted bread (focaccia, Texas toast, or thick cuts of sourdough) in a cast iron pan. Add turkey slices, then tomatoes. Ladle a generous amount of cheese sauce over them. Add crispy bacon, another tomato slice, and even more cheese sauce.
6. Return the cast iron pan to the grill at 350-400°F or pop it under your broiler to get that bubbly, cheesy goodness happening.
7. Set it aside for a minute before you dig in.
