Grilled Kalbi Beef Short Ribs

1. In a large bowl, whisk together soy sauce, black vinegar, rice wine vinegar, fish sauce, chili crisp, water, sugar (or honey), garlic, and ginger paste.
2. Add short ribs, tossing thoroughly to coat.
3. Cover and marinate for at least 1 hour, or ideally overnight in the fridge.
4. Preheat your grill to 400°F.
5. Shake off excess marinade and place ribs directly on the grill. Grill for 10 minutes on one side, then flip and grill for an additional 10 minutes. For crispier edges, leave on a few extra minutes.
6. Remove from grill and let rest for 5 minutes. Sprinkle generously with sesame seeds and fresh chives.
7. Serve hot with a side of sweet hoisin sauce, steamed rice, and veggies.
