The perfect side dish for every holiday, this is an easy and simple herb crusted prime rib roast that goes with everything. Made with a blend of rosemary, parsley, garlic, Dijon mustard, and seasonings, then smoked on a Traeger grill.
1. Combine the rosemary, parsley, garlic, canola oil, Dijon mustard, kosher salt, and black pepper in a food processor. Pulse until the mixture is finely chopped.
2. Generously coat the prime rib roast with the herb mixture.
3. Place the coated prime rib in the fridge, uncovered, for 4 hours to marinate.
4. Preheat your Traeger grill to 250°F (120°C).
5. Place the prime rib, bone side down, directly on the grill grates.
6. Grill until the internal temperature of the roast reaches 125°F (52°C) for medium-rare.
7. Remove the prime rib from the grill and tent it loosely with aluminum foil.
8. Let the roast rest for 15 minutes before slicing and serving. Enjoy!
