Homemade Chicken Fried Rice

In a large (12”) nonstick pan or wok on medium heat, sauté white onions, carrots, and avocado oil until softened. Add in garlic and ginger, tossing to coat, then move vegetables over to one side of the pan. Melt butter and sesame oil in the empty side of the pan, then soft scramble the eggs. Add in chicken, rice, oyster sauce and soy sauce. Mix everything in the pan and cook for 10 minutes until completely combined and heated through. Taste test and season with salt and pepper to your liking. Top with green onions and serve. This also works really well with leftover chopped BBQ pork.
