**For the Honey Chipotle Ribs:** Preheat grill to 225°F. Remove the membrane from the back of the St. Louis cut ribs. Spritz the ribs with apple juice and season generously with the prepared honey chipotle rub. Place ribs on the grill, bone side down. Spritz the ribs with apple juice every 45 minutes until the internal temperature reaches 160-170°F. Wrap ribs in a layer of heavy-duty foil, meat side down. Add 0.5 cup of apple juice to the foil packet. Place ribs back on the grill, increasing the grill temperature to 275°F. Grill until the internal temperature reaches 195°F. Remove ribs from the foil and place them back on the grill, meat side up. Glaze with the prepared honey chipotle BBQ sauce and grill until the internal temperature is 204-206°F. Remove from the grill and let rest for 10 minutes. Slice and serve.
