Honey Whiskey Ribs with Sweet Honey Chipotle Rub

First, prepare the sweet honey chipotle rub by combining 2 tablespoons of smoked paprika, 1 tablespoon of light chili powder, 3 tablespoons of honey powder, 2 tablespoons of white sugar, 2 tablespoons of brown sugar, 2 tablespoons of ancient fine sea salt, 1 tablespoon of chipotle powder, 1 teaspoon of granulated garlic, 1 teaspoon of granulated onion, and 1/2 teaspoon of cumin. Apply this rub generously to your pork ribs. Place the seasoned ribs on a Traeger Grills timberline 1300 smoker set to 225F, using Texas Blend pellets. During the smoking process, periodically spritz the ribs with a mixture of apple juice and whiskey. Continue smoking until the internal temperature of the ribs reaches 160-170F. At this point, wrap the ribs (e.g., in foil) and return them to the smoker, cooking until they reach a final internal temperature of 204-206F.
