This recipe details how to bake a non-traditional Irish soda bread with whiskey-soaked raisins, specifically highlighting a preference for baking it on a Traeger grill in a cast-iron pan for superior texture and wood-fired flavor.
1. Soak raisins in whiskey while preparing dough.
2. Whisk flour, oats, baking soda & salt.
3. Mix buttermilk, egg, & honey.
4. Cut butter into dry ingredients.
5. Add wet ingredients & mix to form dough. Fold in raisins.
6. Knead 2–3 minutes.
7. Shape into a round loaf, dust with flour & cut a cross on top. Then add four more holes to let the fairies out. I don’t question this. I just do it.
8. Bake at 375°F in a parchment-lined cast iron pan for 50 -60 minutes or until the internal temp hits 190-196°F.
9. Cool on a rack under a kitchen towel.
10. Slice thick.
11. Add Irish butter.
12. Be very happy.
