Lemon & Herb Chicken Kebabs

In a medium-sized bowl, whisk together the olive oil, lemon juice, minced garlic, honey Dijon mustard, black pepper, ancient kosher sea salt, fresh picked thyme, finely chopped cilantro, finely chopped mint, and lemon zest to create the marinade. Marinate the chicken breasts for one hour prior to grilling. Cut the chicken breasts into same-sized pieces for skewers. Preheat your grill to 400F. Grill the chicken skewers until the internal temperature of the boneless, skinless chicken breast reaches 165F.
