Loaded Pizza with Smoked Garlic Aioli

1. **Roast the Garlic:** Trim the tops of the garlic bulbs and arrange them on a cookie sheet. Drizzle with olive oil, kosher salt, and finely ground pepper. Preheat your grill (like a Traeger) to 275F using your favorite pellet flavor (e.g., pecan). Grill the garlic for 1-2 hours until it starts to take on a golden color. Cover the garlic bulbs with foil and continue to grill for approximately 30-45 minutes until softened. Cool the roasted garlic completely.
2. **Prepare the Smoked Garlic Aioli:** Once cooled, squeeze and smash the cloves from the 2 roasted garlic bulbs with a fork to make a paste. Add 2 tablespoons of olive oil, 3/4 cup mayonnaise, 2 tablespoons lemon juice, and 1 tablespoon chives. Season with salt and pepper to taste. Mix well until combined. This aioli can be used as a pizza topping, sandwich spread, and more.
3. **Prepare the Pizza:** Preheat your grill or oven to 450F. Stretch the ready-to-bake pizza dough by hand or with a rolling pin and place it onto a pizza pan or stone (a pan with a silicone liner works well). Spread a thin layer of marinara sauce over the dough, then top with slices or shredded mozzarella cheese. Evenly add your desired toppings: onions, grilled chicken, peppers, pepperoni, and bacon.
4. **Bake the Pizza:** Bake for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
5. **Serve:** Remove the pizza from the oven/grill, slice, and top with the homemade smoked garlic aioli. Enjoy immediately!
