Country-style ribs are an economical cut for BBQ that, with time and patience, become tender, flavorful, and delicious. This recipe details a simple method for making them on the grill, featuring a sweet and spicy mango habanero glaze.
1. Preheat your grill to 250°F.
2. While the grill is heating, trim any excess fat from the bottom of the country-style ribs. Do not discard the fat, it can be rendered or deep-fried.
3. Spritz the cold ribs with apple juice (or pineapple juice/mango nectar) and season them generously with Traeger Pork & Poultry Rub.
4. Insert a MEATER probe into the thickest part of the ribs and place them on the grill. Cook, spritzing with apple juice every 45 minutes, until the internal temperature reaches approximately 170°F.
5. Transfer the ribs to a pan with 1 cup of apple juice, cover tightly with foil, and return them to the grill. Increase the grill temperature to 275°F and continue cooking until the ribs reach at least 195°F.
6. Remove the ribs from the pan and place them back on the grill.
7. Warm about 3/4 cup of Melinda’s Mango Habanero Preserves until loosened. Glaze the ribs with the warm preserves.
8. Continue cooking the glazed ribs on the grill until they reach an internal temperature of 200–205°F, at which point they will be beautifully tender.
