Maple Chipotle Ribs

First, prepare the maple chipotle rub: Mix 1/2 cup maple powder, 1/4 cup brown sugar, 1/4 cup smoked paprika, 3 tbsp kosher sea salt, 2-4 tbsp ground chipotle powder (adjust to your heat preference), 2 tbsp mild chili powder, 1 tbsp granulated garlic, and 1 tbsp granulated onion well. Store in an airtight container.

To cook the ribs: Start with St Louis Ribs and pull the membrane. Preheat your grill (e.g., Traeger) to 225F. Spritz the ribs with apple juice and generously rub with the homemade maple chipotle rub. Place ribs on the grill bone side down. Spritz with apple juice every 45 minutes. When the ribs reach an internal temperature of 170F and the bark is set, it's time to wrap. Place the ribs meat side down on a piece of heavy-duty foil. Add in 1/2 cup organic maple syrup and 1/2 cup apple juice to the packet. Close the packet and return to the grill meat side down. Increase the temperature to 275F. Remove the ribs when they reach anywhere from 202-206F internal temperature. Carefully remove ribs from the packet and rest for 5-10 minutes. Take the packet juices and use a fat separator. Cut your ribs and drizzle with the defatted packet juices. Serve and enjoy!
