Mexican Street Corn Inspired Pasta Salad

Cook pasta in boiling salted water until Al Dente. Cool Completely. In a separate bowl whisk mayonnaise, sour cream, chili powder, chives, garlic, chipotle powder and salt. Add in pasta and toss to coat. Reserve a couple tablespoons each of the cilantro, corn, pepper and Queso to top the salad. Fold in the corn, pepper, onion, lime zest, cilantro and Queso fresco with the pasta. Top with reserved items. Right before serving sprinkle with the lime juice and toss. Taste and adjust salt if necessary. For the best flavor possible refrigerate overnight prior to serving.
