Midweek Meatball Madness

Preheat your grill to 225 F. Place the frozen meatballs directly on the grill grates (or in a grill-safe pan) and smoke for 1 hour. After smoking, transfer the meatballs to a 9-10” cast iron skillet. Increase the grill temperature to 350 F. Top the meatballs with 2-3 cups of your favorite marinara sauce and toss to coat evenly. Place the skillet back on the grill and cook for 20-30 minutes, or until the sauce is bubbling. Add a generous amount of fresh mozzarella cheese over the meatballs. Continue to grill until the mozzarella is melty and bubbly. Finally, add plenty of fresh basil. Remove the skillet from the grill. Pile the meatball mixture high into fresh bakery buns and top with additional marinara sauce if desired. Serve immediately.
