My Best-Ever Smashed, Mashed & Smoke-Roasted Confit Garlic Potatoes 🥔🔥

1️⃣ Boil the potatoes: Start in cold salted water → boil until fork-tender (12–15 minutes). 2️⃣ Warm the goodness: Gently heat the heavy cream, butter, confit garlic, thyme & chives until warm and fragrant. Don’t boil — just melt and infuse. 3️⃣ Smash & mash: Drain well and mash to your preferred texture. (I like mine a little chunky — texture is life.) 4️⃣ Add the magic: Pour that warm garlicky mixture over the potatoes and mash it in. I absolutely added more garlic at this stage. No regrets. 5️⃣ Smoke-roast it: Preheat your grill to 275°F. Place the mashed potatoes in a grill proof pan on the grill for 45 minutes to soak up that beautiful woodfired flavor. Stir right before serving and garnish with fresh thyme, and serve immediately.
