Nashville Sweet Heat Chicken Waffle Sandwiches

Preheat peanut oil in a deep heavy bottomed pot to 350F. Preheat oven to 350F. Beat eggs in a shallow bowl and whisk in 1/4 cup Traeger hot sauce, set aside. Pour flour into a shallow bowl and mix in Traeger rub, set aside. Add chipotle powder to the flour if you like it spicier. Pour panko into a shallow bowl and mix in salt and pepper, set aside. Slice or pound chicken breasts into an even 1/4” thickness and pieces that are maximum 4” wide. Mix remaining 1/2 cup hot sauce and maple syrup into a bowl and set aside (adjust hot sauce to your liking). Dredge chicken breast in seasoned flour then into the egg mixture. Transfer chicken to the panko mixture, pressing crumbs into both sides. Repeat for each piece of breast. Fry chicken pieces in oil for 2-3 minutes per side until golden and crispy. Transfer chicken to a baking sheet with a mesh baking rack. Brush fried chicken pieces with the maple syrup mixture. When all of the chicken is done frying, bake chicken for 15-20 minutes or until the internal temperature reaches 165F using a Thermapen. Warm waffles and brush with additional maple syrup. Top buttered crispy waffles with chicken and serve with coleslaw & pickles if desired. Serve warm.
