No Wrap Smoked St. Louis Ribs with Honey Chipotle Rub

First, prepare the DQ Sweet honey chipotle rub: In a bowl, combine 2 tbsp smoked paprika, 1 tbsp light chili powder, 3 tbsp honey powder, 2 tbsp white sugar, 2 tbsp brown sugar, 2 tbsp ancient fine sea salt, 1 tbsp chipotle powder, 1 tsp granulated garlic, 1 tsp granulated onion, and 1/2 tsp cumin. Mix well.

Next, prepare the ribs: Remove the membrane from the St. Louis ribs and spritz them with apple juice. Season generously with the prepared rub on both sides. Then, transfer the ribs to the grill, set to 250F. Spritz the ribs with apple juice every 30-45 minutes throughout the cooking process. When the internal temperature of the ribs reaches 190-195F (measured between two bones), glaze them with your DQ OG sweet sauce. Continue to cook until the internal temperature hits 204F. The total cook time for thick St. Louis ribs will be almost 6 hours. Once cooked, rest the ribs for just a couple of minutes before slicing and serving.
