Peanut & Pig Candy Brittle

1. Prepare the Pig Candy: Brush thin slices of center cut bacon with maple syrup and sprinkle with pork and poultry rub. Place bacon on mesh baking racks, turn grill to 275F, and cook until crispy. Remove from grill, cool completely, and chop finely. Set aside 3/4 cup for the brittle (use any remaining for chocolate-dipped pretzels or other treats).
2. Make the Brittle Base: In a large microwave-safe bowl, combine 1 cup white sugar and 3/4 cup corn syrup.
3. Microwave on high for 4 minutes.
4. Carefully add 1 cup of unsalted nuts (peanuts, cashews, etc.) to the bowl, mix well, and microwave for an additional 3 minutes.
5. Stir in 2 tablespoons unsalted butter and 2 teaspoons whiskey.
6. Microwave for 2 more minutes.
7. Finish the Brittle: Remove the bowl from the microwave. Stir in the 3/4 cup finely chopped pig candy, then immediately add 1 1/2 teaspoons baking soda. The mixture will bubble and froth.
8. Quickly pour the brittle onto a buttered piece of parchment paper or a silicone sheet.
9. Spray a silicone spatula with non-stick spray, then spread the brittle thinly to about 1/2 inch thickness.
10. Allow the brittle to cool completely for at least 1 hour.
11. Once cool, break into pieces.
12. For best results and storage, keep refrigerated between pieces of parchment paper.
