Pretty as a Picture Focaccia

In a large bowl whisk yeast water and sugar. Set aside until foamy. About 20 minutes.

Combine water mixture with Italian seasoning, salt, 3/4 cup olive oil and 51/2 cups of flour. Knead dough with remaining 1/2 cup of flour (if needed) for 10 minutes until the dough is smooth and soft. Coat the inside of a large bowl with olive oil. Place dough in bowl and cover with plastic wrap. Let dough rise to double size. Approximately 1-2 hours.

Coat an 18x13 “ pan with 1/2 cup olive oil. Press dough into pan stretching to fit. Drizzle on remaining olive oil and make lots of indentations with your fingers all over the dough. Sprinkle with Parmesan. Cover with plastic wrap and let rise for an additional 1-2 hours.

Preheat traeger to 400F. Remove plastic wrap and add veggies if using. Bake focaccia for 35-40 minutes turning after 20 minutes and until lightly golden and crispy around the edges.
