Quick Queso Mac & Cheese

Cook 1lb cavatappi pasta for 7 minutes. In a bowl, combine the 2 jars of medium queso, 2 cups of shredded cheddar (from the total 4 cups), 1/2 cup pasta water, 1 cup of 2% milk, and the 4oz can of green hatch chiles. Mix well. Add the cooked pasta to the queso mixture and stir to combine. Fill a non-stick sprayed disposable half pan or grill-proof pan with the pasta mixture. Top with the remaining 2 cups of shredded cheddar, the 3/4 cup of panko bread crumbs, and the 2 tablespoons of dried chives. Bake at 350F (preferably in a Traeger grill as suggested) until the cheese is melted and bubbling.
